Among its distinguished guests were Victor Hugo, Gustave Courbet, and many of the era\u2019s cultural luminaries.<\/p><p>This salon was not merely a place to taste wine, but a forum where ideas about art, philosophy, and the spirit of terroir intertwined \u2014 celebrating wine as a living expression of nature, culture, and human craftsmanship.<\/p><p>More than a century later, in the 2010s, Mr. Olivier de Cayron, a descendant of Dr. Lavalle, revived this heritage.
